100% Cabernet Franc from a six-hectare lieu-dit on the iconic chalk cliffs of this region. The vines are 35-40 years old, the fruit is hand-harvested, destemmed and fermented with natural yeasts, and has always been bottled unfiltered at the request of the equally iconic and sadly departed Joe Dressner. On the nose, it is fresh and brambly. The flavors match the nose, dark berries with hints of wild strawberry and notes of “sous bois”. Fermented and finished in steel, the acidity holds the weight of the wine and lingers straight through the finish. Simply classic!
