Portland based distillery Bull Run’s Pinot Noir finished whiskey is aged for 9 years in used bourbon barrels before being aged for 18 months in Pinot Noir casks from Willamette valley’s Brooks winery. The 96% corn mash bill here makes this essentially a bourbon but the whiskey never sees new oak( only used barrels) so can’t legally be called bourbon. The long aging in older oak barrels gives the spirit a certain elegance and refinement and the Pinot Noir finish lends some subtle fruit notes and almost vinous complexity. All of the distillery’s whiskeys are proofed down with the famously soft water from the Bull Run reservoir that helps to add to a textural roundness and @50% abv a really impressive drinkability.
