Coming from 6 singles vineyards (Sexton, Applejack, Primavera, Swallowfield, Wombat Creek and Tarraford), Pinots are 100% hand-picked, chilled overnight, cold soaked for 3 days, then allowed to warm in small open fermenters in order to kick start WILD fermentation. 100% destemmed, fermented, pressed and matured in French oak (10% new) for 8 months. Blended and bottled by gravity without fining or filtration. Incredibly fresh and clean !!! A Gem !!!
