2018 Bodegas Valdespino Cádiz Vina Macharnudo Alto Blanco

This is Palomino, the grape traditionally used for fino sherry, grown in a single vineyard on Albariza, which is a white chalky soil. It is fermented in casks under a layer of flor before it is bottled.  On the has sherry-like aromas with bitter almond and a vibrant finish.  Perfect with manchego cheese.   Only 400 cases produced.
