2020 Bernard Baudry Chinon Blanc Boisee
Chenin on clay and limestone again. Rare to find an A.O.C. Chinon Blanc as few people make them and fewer export them. Organic, naturally fermented, and truly stunning. Croix Boissée is in Cravant, near the winery, on a south-exposed slope overlooking the Vienne. The Baudry plots total 3.1 hectares of low-yielding vines, ranging from 15 to 40 years old, on clay soils rich in white tuffeau (soft limestone) and iron. They are certified organic like all of the Baudry vineyards.
The fruit is hand-harvested, destemmed and moved by gravity into cement vats. Fermentation with native yeasts and without sulfur or temperature control lasts around 3 weeks. The wine is then aged in used barrique for 2 years and is bottled without filtration. It is the most structured of the Baudry wines and considered to be the most age-worthy (though all of their bottlings age beautifully) Organic.
