It's hand-harvested from 25+ year old vines in small wooden crates, spends 12 hours on its skins, is native yeast fermented in tanks, spends 6 months in stainless on its lees, then is bottled lightly fined, lightly filtered and with a drop of SO2 for stability. It's a rich yet bright white wine, offering chalky lemon zest, grapefruit, green apples and smoky notes, with a beautiful mineral core ending in a long grippy finish.

Treated Organically, they are planted in the Contrada Calamita to deep clay soils, hand-harvested, wild-yeast fermented in stainless steel before being aged in neutral barrels. It offers bright red spicy plummy fruit with sarsaparilla and smoky mineral accents on a medium frame that remains fresh despite its hot climate.
